It is necessary

  • - 147-155 ml of milk;
  • - 95-110 ml heavy cream;
  • - 2 fresh peaches;
  • - 1 large banana;
  • - 3 eggs;
  • - 110 g brown sugar;
  • - 15-22 ml of lemon juice;
  • - salt;
  • - 115-125 g of butter.

Instructions

Step 1

Stir the milk and cream in a saucepan, place on the stove, bring to a boil and remove from heat. Use a blender to grind the banana into puree.

Step 2

Separate the yolks from the proteins. Beat the yolks and sugar with a blender, add the banana puree, pour in the lemon juice. Gradually add the cream and milk mixture to the egg-banana mixture while whisking it with a blender until smooth. Pour the resulting mass into a saucepan. To prevent the cream from burning, boil it in a water bath over low heat, stirring constantly, for 4-7 minutes.

Step 3

Peel peaches, rinse with boiling water. Sprinkle with a little sugar and beat with a blender in mashed potatoes, add to the banana custard.

Step 4

Grease the soufflé molds with soft butter so that the soufflé does not stick to the walls. Place soufflé in molds, sprinkle with sugar on top.

Step 5

Remove prepared molds in the cold. Beat the whites with a pinch of salt. Gently add the whipped egg whites to the peach-banana mixture.

Step 6

Fill the molds halfway with the mixture. Knock on each mold so that the mass settles to the bottom, and refill the molds to the top. Put them in an oven preheated to 176 degrees for 13-16 minutes. The soufflé should rise and brown.
