A savory appetizer of peppers with cheese filling. Perfectly complements any table. Such rolls can be cooked in the oven, but they are most appetizing in the fresh air, on the grill.
It is necessary
- - 4 things. sweet red pepper;
- - 4 things. sweet yellow pepper;
- - 400 g of fresh cottage cheese;
- - 250 g feta cheese;
- - 100 g of hard cheese;
- - 300 g of pickled cucumbers;
- - 1 PC. lemon;
- - 100 g of dill greens;
- - 100 g of parsley;
- - 50 g fresh basil;
- - 20 g of olive oil;
- - salt to taste.
Instructions
Step 1
Preheat the oven well. Rinse the peppers in cold running water, dry thoroughly. You do not need to peel and cut the peppers, do not remove the stalk either. Place whole peppers on a baking sheet and place in oven. Bake the peppers until the skin is very browned. Transfer hot peppers from a baking sheet to a tight plastic bag and let cool slightly.
Step 2
Remove the cooled peppers from the bag, remove the stalk, remove the film from the peel with a wide knife, grab one edge and pull slightly. Remove seeds. Cut each pepper into four wide strips.
Step 3
Prepare the filling for the rolls. Rinse the greens in cold water, dry and chop finely, finely chop the cucumbers too. In a large blender bowl, combine cottage cheese and sour cream, grated cheese, add feta cheese. Whisk and add salt and lemon juice. Add herbs and cucumbers and whisk again.
Step 4
On each strip of pepper, place a little filling on the edge, wrap it in a roll and pin with a skewer or toothpick. The rolls can be served both cold and heated.
