How to cook boletus properly

Ingredients (per 3 servings):

  • 400 grams of oil;
  • 400 grams of white crackers;
  • 150 grams of wheat flour;
  • 60 grams of hard grated cheese;
  • 3 eggs;
  • two tablespoons of ghee;
  • two tablespoons of sour cream;
  • salt;
  • 50 ml of milk.

Cooking method

Boil the mushrooms in water that is salted to taste for two minutes, drain in a colander. Finely chop the dried boletus. Pour the crackers with hot milk. When the mixture has cooled, add butter (pounded with raw yolks), mushrooms, salt and flour to it. The mixture should turn out like thick sour cream. Then beat the whites into a stiff foam and gently knead into the dough. The prepared mixture is poured into a greased mold and baked in the oven. The dish is served warm, sprinkled with ghee and sour cream.

Who is not recommended to eat oil

Not all people will benefit from boletus. Mushrooms are considered a heavy food because of the chitin, lignin and cellulose they contain. Oil is not recommended for people during exacerbations of stomach ulcers, pancreatitis. And also they should be excluded from the diet of patients suffering from renal failure and liver disease. Children should also not be given dishes with oils, due to the weakness of their digestive system.
