Semifredo is a famous Italian delicacy very similar to our favorite ice cream. Semifredo is served in the form of a cake, cut into portions. A refreshing summer dessert will be enjoyed not only by children, but also by adults.

It is necessary

  • heavy cream 33% - 300 ml,
  • peaches - 3 pieces (can be replaced with 300 grams of peach puree),
  • basil - one small bunch (optional)
  • eggs - 2 pieces,
  • powdered sugar - 6 tablespoons.

Instructions

Step 1

Pour the peaches with one glass of boiling water and leave them for a few minutes.

After 2-3 minutes, pour cold water over the peaches and carefully remove the skin.

Cut the peaches into cubes, then grind them in a blender until puree.

Step 2

Divide the resulting peach puree into two parts.

Transfer the first part of the peach puree to a volumetric cup.

Chop the basil as small as possible and mix it with the first part of the puree.

Step 3

Whip the cream until fluffy.

Add a tablespoon of lush cream to the second part of the puree.

Mix the remaining cream as carefully as possible with the first part of the peach puree, which is in a cup with basil.

Step 4

Separate the yolks from the whites. In a bowl, beat the yolks with three tablespoons of powdered sugar until a fluffy, light mass, which we add to the first part of the puree in a cup.

Step 5

In another bowl, beat the whites with three tablespoons of powdered sugar until a dense mass is formed. Gently add a tablespoon of whipped whites in mashed potatoes with cream.

Gently add the rest of the whipped proteins to the first part of the puree.

Step 6

Cover the silicone or glass mold with cling film.

Put 3-4 tablespoons of the creamy basil base in the mold. The next layer comes from a protein-peach base. Then again basil, and peach on top. Thus, we fill in the entire form.

Step 7

Cover the dessert with cling film and put it in the freezer for 5-6 hours.

Before serving, the dessert should be kept in the refrigerator for half an hour. Decorate our ice cream cake with peaches, basil, nuts or chocolate.
