Semifredo. This name hides an ice cream dessert that has a wonderful taste. This extraordinarily tasty treat is even easier to prepare than homemade ice cream. I offer you a recipe for making semifredo with lemon.
It is necessary
- - lemon - 1 pc.;
- - eggs - 8 pcs.;
- - powdered sugar - 130 g;
- - cream - 100 g;
- - cognac - 1 teaspoon;
- - salt - a pinch.
Instructions
Step 1
After distributing the egg whites and yolks into different cups, send the first to the refrigerator for a while. Thanks to this procedure, the proteins will better keep their shape while they are beating.
Step 2
With the egg yolks, do the following: Combine them with an ingredient such as powdered sugar. Beat the resulting mixture well, then add the zest grated on a fine grater from one lemon and the juice squeezed from this fruit into it. Mix everything properly. Heat this mass with a water bath until it thickens. Do not forget to stir it continuously during this procedure.
Step 3
After the yolk mass has thickened, remove it from the stove and stir with a spoon until it cools. If this is not done, then it will simply be covered with a crust, which is not desirable.
Step 4
Whisk six of the eight egg whites in a separate bowl until frothy. Then add the pre-chilled cream to this mass first. Whisk the mixture and add cognac to it. Mix everything well. By the way, it is best to use fatty cream for making lemon semifredo.
Step 5
Add salt to the remaining egg whites. Mix everything until stable peaks.
Step 6
Mix the cooled mass of egg yolks with the creamy protein. Gently add the egg whites just beaten with salt to the resulting mixture. Mix everything not randomly, but gently, moving the spoon up and down.
Step 7
Cover the prepared baking dish with a sheet of parchment paper and pour the mixture into it. Send the future dessert to the freezer and do not touch it until it hardens. Semifredo with lemon is ready!
