Semifredo is a frozen dessert that you can make yourself. There are no words to describe this incredibly delicious lemon treat! This recipe can be used to make both lemon and orange semifredo.
It is necessary
- - 120 g icing sugar;
- - 100 ml of cream;
- - 8 egg yolks;
- - 8 egg whites;
- - zest and juice from 1 lemon;
- - cognac or vodka.
Instructions
Step 1
Take eight large chicken eggs. Separate the yolks from the whites. Beat the yolks with powdered sugar, add lemon zest, grated on a fine grater, mix. Add freshly squeezed lemon juice, whisk in a water bath. The mass should become thick. A water bath is simple: boil water in a saucepan, place a container with a mass on it. Remove the container from the bath, continue beating the mass until the bowl cools.
Step 2
Now whisk six whites with cream, add a little brandy or vodka. You can not add alcohol, but when frozen, thanks to the alcoholic dessert, it will not crystallize.
Step 3
Now mix the egg yolks with the whites. And beat the two remaining proteins with a pinch of salt and add to the already prepared mixture. Mix everything gently.
Step 4
Cover the form with baking paper, pour the mass into it, cover with cling film on top. Place in the freezer for 4 hours.
Step 5
Serve chilled lemon semifredo or garnish with fresh lemon slices and orange or lemon zest.
