Do you like Italian food? Then, without a doubt, you will like risotto with mushrooms and zucchini. Spend some time preparing this dish, and the result in the form of grateful family members and guests will not be long in coming.
It is necessary
- - 1 tbsp. a spoonful of olive oil;
- - 1 onion;
- - 2 glasses of Arborio rice;
- - 6 glasses of chicken broth;
- - 1 zucchini;
- - 100 g of mushrooms;
- - 60 g parmesan;
- - salt.
Instructions
Step 1
Heat butter in a skillet over medium heat. Peel the onion and chop it finely. Put it in butter and fry for about 4 minutes. The onion should reach a softened state.
Step 2
Once the onion is done, add the rice and cook for another 2 minutes.
Step 3
Then add 1 cup of broth to the resulting mass. At this stage, the mixture must be constantly stirred until all the broth is absorbed.
Step 4
Pour in another glass of broth. Continue cooking, stirring occasionally.
Step 5
Finely chop the mushrooms and zucchini. Set aside.
Step 6
Add 3 more glasses of broth to the mixture that we are preparing. Attention! Do not allow the broth to completely absorb before adding the next batch. If this happens, the rice can stick to the bottom.
Step 7
Add chopped mushrooms and zucchini to the risotto. Cook the zucchini and mushroom platter until the vegetables are softened.
Step 8
Rub the parmesan on a fine or coarse grater and add it to the mixture. Wait for the cheese to melt. Stir the whole mixture periodically.
Step 9
Pour in a glass of broth that you have left. Cook until all the broth is absorbed.
Step 10
Try rice. If the dish is not quite ready for you, then continue adding broth, stirring occasionally. Cook the dish until it is ready.
