It is necessary

  • Ingredients for 2 persons:
  • - 150 gr. round rice;
  • - 100 gr. fresh oyster mushrooms;
  • - 100 gr. turkey fillet;
  • - 20 gr. butter;
  • - a liter of chicken broth;
  • - half an onion;
  • - 200 ml of white wine;
  • - 50 gr. grated parmesan;
  • - 2 teaspoons of curry;
  • - olive oil;
  • - salt.

Instructions

Step 1

In a saucepan, bring the chicken broth to a boil.

Step 2

Chop the onion very finely. Cut the turkey and mushrooms into small cubes.

Step 3

In a frying pan with a thick bottom, heat the olive oil along with the butter. Fry mushrooms and turkey over very low heat. As soon as they turn golden, add the onion, stir, close the lid and leave to simmer for 5 minutes.

Step 4

Pour the rice into the pan, mix everything very thoroughly so that the rice absorbs all the aromas and is saturated with oil. When the rice becomes a beautiful golden color, pour wine into the pan and simmer the risotto for 4 minutes so that the alcohol evaporates.

Step 5

Add curry to the rice and stir. Pour in boiling chicken broth, but not all, but only part, so that all the rice is covered with it. Stir constantly, and when the broth evaporates, add a new portion. We repeat this until the broth ends.

Step 6

Add Parmesan, salt and pepper at the last moment, close the lid and let the rice stand for a few minutes. Then we mix it with a wooden spatula and serve on the table, decorating with a sprig of any greenery.
