  • Flour - 180 g;
  • Sugar - 180 g;
  • Eggs - 6 pcs.
  • For the cream:
  • Butter - 250 g;
  • Granulated sugar - 200 g;
  • Vanilla sugar - 1 sachet;
  • Egg yolks - 2 pcs.;
  • Cocoa powder - 1-2 tbsp. spoons.

Step 1

Separate the whites from the yolks. Mix the yolks with 120 grams of granulated sugar and beat with a mixer until light color. Whisk the whites until frothy, then add the remaining sugar and beat until crisp. It is very important not to kill the squirrels. Toss the whites with the yolks. Sift flour on top. Stir the dough gently from bottom to top until smooth and place in a medium-deep pan. Bake in an oven preheated to 190 degrees for about half an hour.

Cool the finished cake at room temperature. Then cut lengthwise in two. To prevent the cake from getting dry, the cakes can be soaked. To do this, dissolve 50 g of sugar in 70 g of water, add a teaspoon of brandy or Cahors, if desired. Brush the cakes with the mixture.

Step 3

To prepare the cream, combine egg yolks, milk, granulated sugar and put on a low heat in a non-stick dish. When the mixture is warm, turn the heat up slightly and bring to a boil with constant stirring. Simmer for about 5 minutes, stirring continuously, then remove from heat and cool at room temperature. Whisk in the vanilla sugar and butter, then, whisking, gradually add the cooled mixture until the cream is smooth and airy. Add cocoa powder and stir. Set aside some of the cream for decoration.

Step 4

Assemble the cake by smearing the cakes with cream. On top, make cream decorations using a cornet. Let your imagination run wild and decorate the cake with chocolate, nuts, candied fruits or fruits.
