Kharcho is a soup based on beef, walnuts and rice. The dish is national in Georgian cuisine. This soup can be easily prepared in a slow cooker. But it is worth considering that a lot of seasonings and spices are required for kharcho. The soup turns out to be incredibly tasty, aromatic and rich.
It is necessary
- - beef 500 g
- - rice 0.5 cups
- - ground walnuts 0.5 cups
- - water 2 liters
- - onions 3 pcs.
- - parsley root 1 pc.
- - flour 1 tbsp. the spoon
- - 5 cloves garlic
- - vegetable oil 2 tbsp. spoons
- - black peppercorns 7-10 pcs.
- - coriander seeds 0.5 tsp
- - bay leaves 3 pcs.
- - Georgian tkemali sauce 2 tbsp. spoons
- - hops-suneli 2 tsp
- - chopped parsley 2 tbsp. spoons
- - chopped cilantro 1 tbsp. the spoon
- - chopped basil greens 0.5 tbsp. spoons
- - cinnamon 1 pinch
- - saffron 0.5 tsp
- - ground red pepper 0.5 tsp
- - salt
Instructions
Step 1
Rinse the beef meat, cut into medium-sized pieces, put it in a multicooker bowl, pour in two liters of water, add chopped parsley root and cook for 2 hours using the "Soup" or "Stew" mode.
Step 2
In a frying pan, fry the chopped onion with flour in vegetable oil.
Step 3
Remove the finished meat from the broth, and the broth itself must be filtered. Wash the multicooker bowl well and put the washed rice, meat and fried onions in it, adding a little salt.
Step 4
In a mortar, crush black peppercorns and coriander seeds. Send this mixture, along with the bay leaf, to the broth. Cook all ingredients for 40 minutes in the "Soup" or "Stew" mode.
Step 5
5-10 minutes before the end of the kharcho cooking process, add walnuts, suneli hops, parsley, saffron, cinnamon and red pepper to the soup.
Step 6
When the soup is ready, put the last ingredients in it - garlic, basil and cilantro passed through a press. Let the kharcho brew for another 10 minutes and you can serve a fragrant dish to the table.
