- beef tenderloin - 1.5 kg
- green peas - 400 gr.
- onion - 1 pc.
- carrots - 2 pcs.
- leeks - 1 pc.
- garlic - 4 cloves
- white sparkling wine - 1 l
- brandy - 1 glass
- ham - 300 gr.
- flour - 200 gr.
- olive oil - 250 ml.
- salt
- black peppercorns - 50 gr.
- bay leaf - 50 gr.
- parsley - 300 gr.
Instructions
Step 1
Coarsely chop beef, carrots, onions, leeks, garlic and place in a deep bowl, top with bay leaves and black peppercorns. Pour brandy and a liter of sparkling white wine there. Cover the dishes with cling film, put in the refrigerator and marinate for 10-12 hours.
Step 2
Remove the pieces of beef from the dishes, roll in flour and fry in a pan with olive oil until golden brown. Transfer the meat from the frying pan to a deep saucepan, pour over the rest of the marinade, close the lid and cook for 30 minutes.
Step 3
Arrange the beef with bay leaf from a saucepan. Make the sauce by crushing the remaining marinade in a saucepan with a blender.
Step 4
Cut a piece of ham into small pieces, put in a pan with green peas and fry with olive oil for 10 minutes.
Step 5
Place the beef on a large flat plate on one side, drizzle with the prepared sauce. Put the toasted ham with green peas on the other side. Bon Appetit!
