Ingredients:

  • 200-250 g of boiled low-fat sausage;
  • 100 g of radish;
  • 1 liter of kvass;
  • 5 medium potato tubers;
  • ½ tablespoon lemon juice (can be substituted with vinegar);
  • 200-250 g of fresh cucumbers;
  • 3 chicken eggs;
  • ½ tablespoon of mustard;
  • 1 tablespoon of granulated sugar
  • salt and herbs.

Preparation:

  1. First you need to prepare the potatoes and eggs. To do this, they are thoroughly washed and sent to a saucepan of water, where they must be cooked until fully cooked. Then you need to get the eggs and put them in ice water to cool. The potatoes must also be removed from the hot water.
  2. The rest of the products, before starting to cook okroshka, are recommended to be put in the refrigerator for several hours.
  3. Peel the eggs and cut them into small cubes with a sharp knife; the yolks can be crumbled by hand. The resulting egg mass is poured into a deep cup.
  4. Then you need to peel the potato tubers and, cutting them into small cubes, also send them to the cup. The cucumbers must be washed and chopped with a grater, so the okroshka will turn out to be more tender, and the taste - richer. The sausage is also cut into small cubes.
  5. The radish must be thoroughly rinsed and, after removing all the dirt and roots, it, like the cucumbers, is crushed with a coarse grater.
  6. If you use green onions and fresh dill, then they are thoroughly washed, finely chopped and salted. Then, with the help of a spoon, everything is thoroughly grinded, but do not let it get porridge.
  7. All of the above products are folded into one deep cup, then prepared chilled kvass is poured into the same. Everything is salted, lemon juice is poured in. Granulated sugar and mustard are also sent there. Then the resulting mass must be very thoroughly mixed.

When serving, okroshka is decorated with chopped fresh herbs, and a small amount of sour cream or homemade mayonnaise is placed in each plate.
