  • Ingredients for 12 standard size muffins:
  • For cupcakes:
  • - butter - 125 g;
  • - fine sugar or icing sugar - 125 g;
  • - 2 large eggs;
  • - flour - 125 g;
  • - a teaspoon of baking powder;
  • - 2 spoons of milk;
  • - a few drops of vanilla essence.
  • For the cream:
  • - butter - 75 g;
  • - milk - 2 spoons;
  • - vanilla essence - 2-3 drops;
  • - icing sugar - 225 g;
  • Additionally:
  • - fresh raspberries for decoration - 4-5 berries per cupcake.

Instructions

Step 1

Sift the flour with a baking powder, mix the eggs with a fork until smooth. In a large bowl, beat the butter at room temperature and sugar - the mass should turn out to be light and fluffy. Stir eggs in small portions to the cream, gradually add flour with baking powder, mix gently. Finally, add milk and vanilla essence, gently knead a homogeneous dough.

Step 2

Preheat the oven to 190C. We put silicone or paper molds in a special cupcake mold. You can use a regular baking sheet, but in this case it is better to use 2-3 paper molds for one cupcake, placing them one on top of the other.

Step 3

We distribute the dough into forms and send it to the oven for 15-20 minutes - the muffins should rise and turn golden. Transfer the cupcakes to the wire rack and leave to cool completely.

Step 4

In a large bowl, beat the butter at room temperature to form a soft mass. Pour in milk and vanilla essence, gradually stir in half of the powdered sugar and beat the cream for a few minutes. Add the remaining sugar and beat the cream until light and fluffy.

Step 5

Using a spatula knife, spread the butter cream over the muffins. Add the raspberries immediately until the cream thickens. A gorgeous dessert is ready!
