Eggplant rolls are an original, healthy and tasty dish. It is much more interesting than just fried eggplants, and thanks to the variety of fillings it can decorate even the most exquisite table.
It is necessary
- - 1 kg eggplant
- - olive oil
- - 1 tbsp. flour
- - dill
- - 100 g Edam cheese, 200 g Feta
- - 3 eggs
- - salt, black pepper
- - bread crumbs
Instructions
Step 1
Wash the eggplants, remove the roots, cut into thin slices. Heat 2 tablespoons. olive oil in a skillet and fry the eggplant on both sides until golden brown.
Step 2
In another frying pan, also heating 2 tbsp. butter, stirring constantly, fry flour until reddish. Wash the dill and chop finely.
Step 3
To prepare the filling, grate Edam cheese on a coarse grater, mix with 2 eggs, add dill, crumbled feta cheese, season to taste with pepper, salt and mix well. Beat the remaining egg.
Step 4
Next, spread the filling on each eggplant slice and roll it up. Dip in beaten egg and then in breadcrumbs; fry in a preheated pan until golden brown. Serve hot.
