The Italian dessert "Tiramisu" is the leader in the number of orders in the cafe. Translated Tiramisu means "lift me up", it is assumed that this name is associated with the vivacity effect of coffee and chocolate.
It is necessary
- - Cheese "Mascarpone" - 500 g
- - Cream 33-35% fat - 150 g
- - Powdered sugar - 100 g
- - Coffee - 200 ml
- - Cocoa powder or grated chocolate - 2-3 tbsp.
- For Savoyardi cookies:
- - 3 egg whites
- - 2 yolks
- - Powdered sugar - 30 g
- - Sugar - 60 g
- - Flour - 50 g
Instructions
Step 1
Make a Savoyardi cookie. Separate the whites from the yolks. Whisk the whites until firm peaks, gradually add half of the sugar.
Step 2
Combine the remaining sugar with the yolks and beat until a light and fluffy mass is obtained.
Step 3
Gently add whites, sifted flour to the yolks and mix from bottom to top with a wooden spatula.
Step 4
Put the dough in a pastry bag or syringe, place on a baking sheet with sticks 10-12 cm long. Sprinkle them with powdered sugar twice through a sieve and leave for 10-15 minutes.
Step 5
Bake for 12-15 minutes until golden brown.
Step 6
Make strong coffee.
Step 7
Whip the cooled cream, gradually adding the icing sugar.
Step 8
1-2 tbsp. add cheese to cream. Stir until smooth.
Step 9
Take a cookie and dip the bottom side of it into the cooled coffee for 1-1.5 seconds. Place in shape. In this way, lay out the cookie layer.
Step 10
Place a layer of cream on top of the cookies and spread it evenly. Sprinkle with cocoa.
Step 11
Repeat the layout of the layers. The last layer should be cream. Sprinkle with cocoa or grated chocolate on top.
Step 12
Refrigerate for a few hours, or better yet, overnight.
