Draniki is a budget and very tasty dish that is loved not only in Belarus, but also far beyond its borders. In order to prepare real Belarusian potato pancakes, you need only four ingredients, and neither flour nor eggs are among them. And such potato pancakes turn out to be surprisingly tender inside and crispy outside.

  • - middle-aged potatoes - 1 kg;
  • - medium-sized onions - 2 pcs.;
  • - salt - 0.5 tsp;
  • - sunflower oil;
  • - grater;

Step 1

Before you start cooking potato pancakes, there are a few key points to consider.

In order to make delicious potato pancakes, you need to choose a potato that is enriched with starch. Therefore, young potatoes are not suitable for this. If you choose the right potatoes, then no other binders (flour and eggs) are needed. Starch, which is rich in mature vegetables, will serve as an excellent bunch of all the ingredients.

The most successful pancakes are obtained from finely grated potatoes. In this case, you need to use a grater, and not other kitchen helpers such as a blender and a food processor. After all, it is potatoes, chopped by hand, that will give the pancakes the same legendary taste. You will have to make some effort, but the result will certainly delight you.

Step 3

To prepare potato pancakes, first of all, potatoes and onions must be peeled and rinsed under running water. Keeping potatoes in water is not recommended to avoid washing out the starch. Therefore, as soon as the vegetables are peeled, they must be grated immediately on the finest grater. To do this, take a large bowl and grate the onions into it first, and then the potatoes. The first step is to take the onion so that the potatoes that are rubbed next to it do not darken.

Once the vegetables are grated, mix them thoroughly together. The mixture will turn out to be pretty liquid. To get rid of excess liquid, place it in a colander and let sit for 5-10 minutes. If you don't have a colander, you can squeeze the mixture out with cheesecloth. Then place it back in the bowl, add half a teaspoon of salt and stir.

Step 5

Now take a frying pan and place it on the stove. To make the pancakes with a crispy crust on the outside and tender on the inside, the pan must be properly heated. After that, pour into it a sufficient amount of sunflower oil 4-5 mm deep and warm it up properly.

Step 6

Use a tablespoon to scoop up the potato and onion mixture and place in the pan. Fill the entire bottom of the pan in the same way so that the products do not touch each other. Fry them until golden brown, about 2 minutes. Then use a fork or spatula to turn the potato pancakes over to the other side and fry until the same crust forms.

Step 7

Transfer the prepared potato pancakes from the skillet to a large plate lined with paper towels so that the towels absorb the excess oil. In the meantime, place the next batch in the pan.

Step 8

Serve warm Belarusian pancakes with sour cream. If desired, you can also offer a vegetable salad, as well as fresh herbs.
