Simple in execution, light, refreshing and very tasty vegetable salad, which we bring to your attention today, can become a real highlight of your table, and will take its place in your cookbook.
It is necessary
- -3-4 young small potatoes
- -3 handfuls of fresh (not frozen!) Spinach
- -200 g green beans (your choice - fresh or frozen)
- -a few black olives
- - half a head of red onion
- -1 tbsp. l. capers
- - parsley - either dry or a little fresh herbs.
- For refueling:
- -1 tbsp. l. mustard
- -2 tbsp. l. lemon (can be substituted with lime if desired)
- -2 tbsp. l. your favorite soy sauce
- -salt and pepper to taste (ideally a mixture of peppers).
Instructions
Step 1
The potatoes must be thoroughly washed, cut into small pieces and boiled until tender in a little salted water. You can cook it both in uniform and peeled.
Step 2
Boil the green beans in slightly salted water for a few minutes to keep them crispy. After that, immediately immerse it in cold water so that it does not lose its color.
Step 3
Now let's get to the gas station. In this salad, it is the dressing that acts as the basis of the salad, since it surprisingly emphasizes the taste of vegetables and complements the taste of the salad. To prepare it, finely chop the onions and mix them with mustard, parsley, soy sauce and lemon juice. Add some salt and pepper.
Step 4
Olives must be pitted and chopped coarsely. Chop the spinach coarsely. In a bowl, mix the potatoes, spinach and beans thoroughly. Add dressing and mix well again.
Step 5
Add capers and olives to the prepared salad, mix again and serve. This salad is ideal for a lean table.
