It is necessary

- - 2 medium sized eggplants;
- - 2 tomatoes;
- - half a large onion;
- - a bunch of oregano;
- - 2 tsp salt;
- - sunflower oil;
- - water;
- - ginger.
Instructions
Step 1
Chop vegetables. Boil the noodles according to the instructions on the pack. Add some salt and oil to the saucepan. Fry the onion until golden brown, add the eggplant and fry for no more than 5 minutes.

Add tomatoes and peppers and cook for about 5 more minutes. Add salt, some water. Cover the pan with a lid and simmer everything over low heat for 10 minutes.
Step 3
Add ginger and mix everything thoroughly. Wash the oregano, dry and tear off the leaves, only they are needed. Place them in a skillet where vegetables are stewing. Cook for about 5 more minutes.
Step 4
Place the noodles on a plate and gently place the stew in the middle. You can start eating food. You can also grind the resulting stew in a blender, then you get eggplant caviar, which you can mix with the noodles. Enjoy your meal.
