Avocado and carrot puree soup is a vegetarian food. The recipe seems to be simple, but the soup turns out to be very tasty due to the combination of such unusual products as avocado, carrots and ginger.
It is necessary
- For two servings:
- - 1 avocado;
- - 1 carrot;
- - 1 lemon;
- - 1 g of almonds;
- - 1 tbsp. a spoonful of ginger;
- - 1 tbsp. a spoonful of agave syrup;
- - paprika.
Instructions
Step 1
Soak a small amount of almonds in cold water for at least 4 hours, preferably 6 hours.
Step 2
Peel the avocado and remove the pit. Cut the pulp into large pieces.
Step 3
Peel the carrots, chop into small cubes. You can boil it first, so that later it is easier to grind in a blender.
Step 4
Remove the zest from half of the lemon, squeeze all the juice into a blender. Add soaked almonds, avocado, carrots, ginger. Grind all components of the soup until smooth.
Step 5
Add fresh carrot juice or plain water for the consistency you want.
Step 6
Add Agave syrup to the soup, along with this syrup you can take drops of Stevia or any liquid honey. Mix everything well.
Step 7
Serve the prepared avocado and carrot puree soup in portioned bowls, sprinkled with paprika to taste.
