"Badambura" is a pastry of traditional Azerbaijani cuisine, which is served on holidays. The product resembles a pie with nuts with a very delicate, nutty taste and an unforgettable note of cardamom.
It is necessary
- For the test:
- - 5 g dry yeast;
- - 75 g of ghee butter;
- - 500 ml of milk;
- - 800 g of wheat flour;
- - 1 tbsp. a spoonful of sugar;
- - 150 g sour cream;
- - 1 pinch of extra salt;
- - 1 PC. eggs.
- For filling:
- - 1 tbsp. a spoonful of cardamom;
- - 300 g of almond crumbs;
- - 300 g of sugar.
Instructions
Step 1
Dissolve yeast and a spoonful of sugar in warm milk, wait 15 minutes for the yeast to activate. Then add sour cream, egg, melted butter. Add flour in small portions.
Step 2
Knead an elastic dough. Knead it well so that it starts to shine. Cover the dough and leave for 1.5 hours in a warm place to increase in volume. Prepare the filling: mix almonds and cardamom with sugar, crushed in a coffee grinder.
Step 3
Knead a lightly matched dough and divide into 10 pieces. Roll each piece very thinly into a square. It should be transparent. Put all the squares in a pile, smearing them with lightly ghee, leave the top square dry. Roll the squares into a roll. Cut the roll into 1.5 cm pieces.
Step 4
In the center of each roll, press gently with your fingers to form a cup. Pour the filling into the well, 3 teaspoons each. Pinch the edges, like a pie, only do not pull the edges too much so as not to damage the layers of the roll.
Step 5
Turn each stuffed roll seam side down and place on a baking sheet. Bake in the oven at 160 ° C for 30 minutes. Sprinkle with powdered sugar.
