  • - partridge fillet - 400 grams;

  • - any sort of raisins - 40 grams;
  • - pine nuts - 40 grams;
  • - white wine vinegar - 1 tablespoon;
  • - balsamic vinegar - 1 tablespoon;
  • - olive oil - 60 milliliters;
  • - orange - 1 piece;
  • - ground cloves, salt and pepper - according to preference.

Instructions

Step 1

Fry whole partridge fillets in olive oil. Squeeze the juice out of the orange and pour it into a shallow saucepan. Add picked and washed raisins and bring to a boil. Turn off the heat and leave to infuse for about half an hour, after which it is necessary to drain the excess liquid.

In a dry frying pan, heat the peeled pine nuts for three minutes. In a bowl, combine nuts, raisins and ground cloves. Cut the fillet into small pieces and roll them in the resulting mixture.
