In the summer, when the first forest mushrooms appear, I really want to pamper loved ones with a delicious dish. Well, what could be better and healthier than a delicate soup, especially if the preparation practically does not require either time or effort.

Ingredients:

  • Any fresh mushrooms - 500 g;
  • Potatoes (preferably young) - 3 pcs;
  • Leek - 1 pc;
  • Fresh carrots - 1 pc;
  • Spider line vermicelli - 3 tbsp. l;
  • A little butter;
  • Fresh parsley;
  • Salt, spices, herbs - to taste;

Preparation:

  1. First you need to prepare the mushrooms: rinse and peel, cut into small pieces and dry from moisture.
  2. Cut the light part of the leek into thin half rings. The green portion can be left for making chicken or vegetable broth.
  3. Set the frying mode in the multicooker assistant and melt the butter. Add onions to it and fry.
  4. As soon as the onion is fried, you can add the mushrooms, season immediately with salt and a small amount of freshly ground pepper. In this case, the mushrooms will absorb all tastes and aromas like a sponge.
  5. Cut the potatoes into strips or cubes. Carrots - in thin strips like for pilaf or in rings.
  6. Mushrooms should simmer for a few minutes with onions and acquire a golden crust.
  7. Now you can add vegetables, cover them with water or chicken broth, and bring them almost to readiness.
  8. A few minutes before the end, add the noodles, check the balance of salt and spices and switch the multicooker to the “warming up the dish” mode.
  9. A little fresh parsley can be added directly to the soup, the rest for serving. It's important not to forget about good sour cream, crispy fresh bread or garlic toast!

A little advice! Of course, with homemade homemade noodles, such a soup will be tastier and healthier, but not all housewives know how to cook it, and often there is simply not enough time for this. Therefore, you can use a purchased one, but choose it carefully. Let it be small vermicelli or a special brand for the first courses, but it is recommended to leave spaghetti and other pasta for the second courses.
