Separate the yolk from the protein. Protein makes the dough coarse, so you don't need it. Beat the yolk into the dough, add cold, ice water. Gather the dough into a ball. Make a depression in it and add nuts there, knead the dough. Then add the chocolate pieces and knead well again.

Roll the dough into a log, cut into equal pieces and give them a round shape. Line a baking sheet with parchment paper, place the cookies at some distance from each other in case they increase in volume. And it will definitely increase!

Shortbread cookies are quick to cook. Preheat the oven to 180 degrees, bake for 10-15 minutes. Place on a serving dish and sprinkle with powdered sugar through a sieve.
