Instructions
Step 1
For baking pies, use a dough prepared using the no-steam method. It involves the simultaneous introduction of all ingredients into the dough. This method is faster and simpler than the sponge one, which requires a lot of time and skill.
Stir yeast in warm milk (or water) up to 35 ° C without clumping. Add sugar. Beat eggs with salt and add to milk with yeast.
Step 2
Gradually add flour into the mixture and stir the dough, avoiding the formation of lumps. Last but not least, add melted margarine or butter to the dough. Knead the dough until it comes off easily from your hands.
Step 3
Place the kneaded dough in a deep dish greased with vegetable oil, cover with a clean cotton towel and place in a warm place.
While the dough is coming up, tinker with the filling.
Step 4
Prepare the filling of your choice. If you like cabbage filling, pre-stew it with onions and spices.
Minced meat should be either fried in a pan, or cooked meat in a meat grinder, add sautéed onion and broth to it.
If you want to bake sweet pies, then put the amount of sugar for sweet pies in the dough beforehand.
The filling in sweet pies must also be prepared in advance: chopped apples can be stewed a little in butter with the addition of cinnamon, if the filling is made of dried fruits, then they must first be boiled, ground in a meat grinder or in a food processor, add sugar and nuts if desired.
Step 5
Let's go back to the test. The matched dough should double in volume. It should be kneaded again and allowed to stand for a while until it starts to rise again.
Put the finished dough out of the dishes on a dry cutting board, previously sprinkled with flour. Divide the dough into small pieces and shape into balls. Leave them to lie on the board for about 10 minutes, you can cover them with a napkin for this time.
Step 6
After that, roll out with a rolling pin or flatten the balls with your fingers into a round cake about 1 cm thick. At the time of rolling, do not press hard on the rolling pin, this will help the pies to be soft and fluffy afterwards.
Put enough filling in the middle of the mug so that the edges of the dough join together without difficulty. Fold in half and pinch the edges neatly without gaps. Shape the patties into an oval shape.
Step 7
Place the prepared pies on a baking sheet pre-oiled and powdered with flour, seam down, at a distance of 2 cm from each other. Place the baking sheet in a warm place for 15 minutes to proof the patties. When ready to bake, the spaced patties should round and slightly increase in volume.
Gently grease the pies with a beaten egg and place in the oven preheated to 180 - 200 ° C for 15-20 minutes.
Step 8
The oven lid can only be opened when the pies are well browned. Then you can check them for readiness. Pierce one of them with a match. If the match remains dry and the dough does not stick to it, then your pies are ready.
