It is necessary
- -¾ cup unsalted butter, softened
- 1/2 cup agave syrup
- -2 eggs, 1 egg divided
- -1 tsp vanilla
- -¼ cups of low-fat sour cream
- -1 tablespoon water
- -1/3 cup almond flour + 1/3 cup extra
- -1 cup rice flour
- 1/2 cup soy flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup chopped walnuts
- 1/2 cup raspberry jam
Instructions
Step 1
Preheat oven to 350 degrees and line baking sheet with parchment paper.
Step 2
In a large bowl, combine dry ingredients (almond flour, rice flour, soy flour, salt, cinnamon, and baking soda). Mix well and set aside.
Step 3
Mix the agave oil and syrup in a mixer. Then add 1 egg and 1 yolk (save the egg white for later) and beat for 20 seconds after each addition. Add vanilla and sour cream. Mix well.
Step 4
Add contents from mixer to dry bowl. Shape the dough, it should be sticky.
Step 5
Whisk 1 egg white and 1 tablespoon of water in a bowl. Shape into cookies and roll in walnuts with almond flour. Cover the baking tray with parchment paper. After placing the cookies on the baking sheet, press through the middle of each cookie a little (this will be the place for your jam).
Step 6
Bake for 10-15 minutes, until cookies are golden brown.
Step 7
Take out the cookies and let cool, then place one teaspoon of jam in the middle. Bon Appetit!
