- 600 g catfish fillet;
- 2 potatoes;
- 2 onions;
- 1 pickled cucumber;
- 50 g butter;
- 4 tablespoons red fortified wine;
- 6 tbsp tomato juice;
- ground black pepper
- salt.
Instructions
Step 1
Catfish fillet with rice Cut the fillet into portions. To remove the ooze odor, rinse them in strong, cold saline solution, then rinse off the salt. You can rub the pieces with lemon juice. Wash and peel carrots, celery and onions and cut them into slices. Place the chopped vegetables in a saucepan, add half of the butter, lay out the fillet pieces, pour over the wine.
Step 2
Preheat oven to 200 ° C, put in a saucepan and simmer until tender. Add a little water to the saucepan if necessary. Remove the cooked fish from the oven.
Step 3
Heat 25 g butter in a skillet, add flour, stir, then add nutmeg, pepper and some juice from the saucepan in which the fish was stewed. Cook for about five minutes, then add the remaining butter, stir and strain through a sieve.
Step 4
Boil the rice, put it on a dish, spread the fillet pieces on top, cover with the sauce, sprinkle with dill and parsley.

Catfish fillet in batter Cut the fillet into portions. Sift flour, pour into a deep bowl, set aside a tablespoon or two to roll over the pieces. Dip an egg into a bowl, stir, salt and add beer. Stir until smooth and the consistency of liquid sour cream.

Dip the fillet pieces in flour, heat the vegetable oil in a pan, dip the pieces in batter and put in the pan. Fry on each side for three to four minutes. Serve with green peas garnished with herbs and lemon slices.

Catfish fillet in a pot Cut the fillet into cubes about two centimeters on a side. Peel the potatoes and cut into cubes of the same size. Dice the onion and sauté in butter until golden brown.
Step 8
Take two baking pots, divide the fried onion in half, and finely chop the pickled cucumber. Put a layer of onion in each pot, then fillet pieces, again a layer of onion, a layer of cucumber and a layer of potatoes. Salt and pepper, pour into each pot two tablespoons of red fortified wine and three tablespoons of tomato juice, cover with lids and put in an oven preheated to 200 ° C for half an hour.

Remove the lids and leave the pots in the oven for another half hour. Serve immediately, sprinkle with chopped herbs.
