Instructions
Step 1
Cut the eggplant in half lengthwise. Finely chop the onion. Place eggplant and onion on a baking sheet, drizzle with lemon juice and bake in the oven until soft.
Step 2
Cut the peach in half, remove the stone. Cut the tomatoes (without skin) into quarters. Chop the garlic. Add peach, tomatoes and garlic to the baked eggplant and onion.
Step 3
Return the baking sheet to the oven for 7-8 minutes. Cool the baked vegetables, put in a blender. Pour in oregano, salt. Beat the mixture until smooth.
