Step 1
Rinse fresh or defrosted chicken and cook in a large saucepan. Be sure to descale after boiling. A small chicken is cooked for 40-50 minutes. Season broth with salt about halfway through cooking.

Peel a large onion, potatoes, small carrots. Cut the potatoes into slices. Chop the onion, coarsely grate the carrots. Sauté the onions and carrots in oil.
Step 3
Carefully remove the boiled chicken from the pan. Put chopped potatoes in the broth, wait for a boil, remove the foam. Add a little chicken seasoning.
Step 4
Make dumpling dough. Break the eggs into a bowl, add half a glass of chilled boiled water, a quarter teaspoon of fine salt, a pinch of baking soda, whisk all the ingredients thoroughly. Add white flour while stirring vigorously. The dough should be firm, but not too thick.
Step 5
A few minutes before the potatoes are ready, add the onion-carrot roast to the pan, try the broth with salt. Then use a spoon to quickly scoop up the dough (about half a large spoon each) and dip into the boiling soup. The dumplings will rise to the surface in a few seconds. They will be ready in 5 minutes. Then close the pan with a lid, let it sweat a little.
Step 6
In the meantime, chop up fresh herbs and cut the finished chicken into small pieces. Arrange the chicken pieces in bowls, pour in the soup. Pepper and add herbs.
