Due to its rich vitamin and mineral composition, cauliflower is called the queen of vegetables. Carbohydrates, fiber, polyunsaturated acids, a complex of vitamins B, C, A, D - this is a far from complete list of useful substances that make up this vegetable. In addition, cauliflower is very tasty, and cooked according to the original recipe will surely become a table decoration.
French cauliflower appetizer
To make an original French dish, you will need:
- ½ head of medium sized cauliflower;
- 3 carrots;
- 150 g of canned green peas;
- 150 g of canned corn;
- 1 can of canned beans (red or white);
- 1 glass of cream;
- 3 tbsp. l. olive oil;
- 1 ½ tbsp. l. butter;
- parsley;
- pepper;
- salt;
- sugar.
Wash the cauliflower and divide into inflorescences, peel and cut the carrots into thin strips. Heat the butter and oil in a skillet and simmer the cauliflower along with the carrots, beans and corn in this mixture for 15 minutes. Then add green peas, add cream and simmer for another 5 minutes. Salt, sprinkle with pepper, add granulated sugar to taste. Mix all ingredients well. Garnish the finished vegetable appetizer with finely chopped parsley.
Cauliflower salad
To prepare an original salad of cauliflower, mushrooms and celery, you will need:
- 1 head of cauliflower;
- 2 stalks of celery;
- 350 g of fresh mushrooms;
- 10 pieces of radish;
- 50 g soft cheese;
- 5 walnuts;
- juice of 2 lemons;
- 5 tbsp. l. olive oil;
- 4 tbsp. l. fatty sour cream;
- ground black pepper;
- salt;
- greens for decoration.
Carefully wipe the champignons with a damp cloth, peel and cut into slices. Then put in a shallow bowl, cover with lemon juice and set for 40 minutes in a cool place to marinate. After this time, drain the remaining juice.
Divide the cauliflower into inflorescences, place in boiling water and cook for 7-10 minutes. Then discard in a colander and cool. Rinse the celery stalks and chop finely, cut 4 radishes into slices, and the rest into slices.
Put soft cheese in a separate bowl and mash it well with a fork, gradually adding olive oil and sour cream. Peel the walnuts, chop the kernels with a knife or in a mortar and put in the cooked mass. Mix everything thoroughly.
Put the prepared salad components in a salad bowl: boiled cauliflower, radish slices, celery and mushrooms marinated in lemon juice. Add the sauce made with cheese, sour cream and nuts. Season to taste with pepper and salt. Stir well and garnish with radish wedges.
Cauliflower royally
To cook royally cauliflower, you need to take the following ingredients:
- 700 g of cauliflower;
- 450 g of meat;
- 1 onion;
- 100 g of cheese;
- 150 g sour cream;
- pepper;
- salt.
Rinse the cauliflower well and dip the whole head in boiling salted water for 1-2 minutes. Then fold in a colander and pour over with cold water.
Rinse the meat (pork or beef) under cold water, dry, cut into small pieces and pass through a meat grinder. Add finely chopped onions, salt, pepper to the resulting minced meat and mix everything thoroughly.
Carefully distribute the prepared minced meat between the cauliflower inflorescences. Then place the stuffed cabbage head on a greased baking sheet. Coat the top of the head of cabbage with sour cream and sprinkle with grated cheese. Bake in the oven at 200-220 ° C for 30-40 minutes. Serve the dish to the table, having previously cut it into portions.
