Cauliflower has a delicate pleasant taste, contains many vitamins and minerals necessary for the body. Dishes with cauliflower differ in variety: it is canned, marinated, fried in batter, added to soups, casseroles, omelets, salads and vegetable stews. But besides the usual dishes, there are also quite unusual recipes for making cauliflower.
Cauliflower pancakes
You will need the following products: 1 kg of cauliflower, 2 chicken eggs, 3 tbsp. tablespoons of wheat flour, 3 tbsp. tablespoons of mayonnaise, a third of a teaspoon of baking powder, salt to taste, 3 tbsp. tablespoons of vegetable oil.
Disassemble the cauliflower into florets and place in cold salted water for an hour. Drain the liquid, dry the cabbage and chop it finely. Add eggs, mayonnaise, sifted flour, salt and baking powder, mix well. Form the pancakes and sauté them in hot vegetable oil for 2-3 minutes on each side.
Stuffed Cauliflower
You will need the following products: 1 large head of cauliflower, 200 g of any minced meat, 100 g of smoked bacon, 100 g of any hard cheese, 1 medium onion, 1 chicken egg, 3 tbsp. tablespoons of sour cream, 200 ml of meat broth, 2 tbsp. tablespoons of vegetable oil, 2 tbsp. tablespoons of bread crumbs, a few sprigs of any fresh herbs, salt and black pepper to taste.
Place the cauliflower in a wide saucepan and cover 2/3 with water. Bring water to a boil, season with salt, reduce heat and simmer cabbage for 5-7 minutes. Remove the head of cabbage from the water and let it cool.
Peel the onion and chop it into small cubes. Cut the bacon into thin strips. Simmer the onion and bacon in vegetable oil until the onion is translucent, then add the minced meat. Fry the filling until the minced meat is done.
Cool the filling, add salt, pepper, raw egg, bread crumbs and finely chopped fresh herbs to it, mix everything well. Turn the cauliflower upside down and fill the space between the buds with the filling.
Put the stuffed cabbage, stalk side down, into a deep baking dish, pour the broth into the mold. Coat the cabbage with sour cream and place it in an oven preheated to 180 ° C.
After half an hour, take out the cabbage, once again coat its surface with sour cream and sprinkle with grated cheese. Bake the cabbage in the oven until the cheese is melted. Cut the finished cabbage like a pie.
Cauliflower soup with cream
You will need the following products: 200 g of cauliflower, 250 ml of milk, 250 ml of any broth, 2 medium-sized potatoes, 2 tbsp. tablespoons of flour, 5 tbsp. tablespoons of cream, raw chicken yolk, 1 tbsp. a spoonful of butter, 1 tbsp. a spoonful of lemon juice, salt, black pepper and nutmeg to taste.
Wash and peel potatoes, cut into cubes. Disassemble the cauliflower into small florets. Mix milk and broth, bring to a boil and add vegetables. Boil the soup for 12-15 minutes. Combine butter with flour and add to soup, stir well to avoid clumping. Whisk the yolk and rub it with the cream. Let the soup simmer for another 1-2 minutes, then add salt, black pepper, nutmeg, lemon juice and yolk with cream.
