Mushroom salads are rightfully popular. Often they become the "nail" of the festive and everyday table. Fresh, fried, boiled and pickled mushrooms are used as the main component. They give the dish a special taste and aroma.
Tiffany salad
To prepare the Tiffany salad with chicken and mushrooms, you will need the following components:
- 350 g chicken fillet;
- 350 g of fresh mushrooms;
- 150 g of walnut kernels;
- 2 heads of onions;
- 2 fresh cucumbers;
- 5 hard boiled eggs;
- 250 g mayonnaise;
- greens;
- salt.
Boil the chicken fillet in salted water, then cool and chop finely. Grind the walnut kernels in a blender or in a mortar and mix with the chicken fillet. Wipe the champignons very thoroughly with a damp cloth or towel and cut into 4 parts. Peel the onions, chop in half rings and fry with the mushrooms in vegetable oil until the onions are golden. Season with salt to taste. Cool the hard-boiled eggs under cold water, peel, separate the yolks from the whites and grate separately on a medium grater. Cut the cleanly washed and dried cucumbers into half rings.
Having prepared all the ingredients in this way, lay out the salad in layers, greasing each with mayonnaise: 1st layer - chicken fillet with nuts, 2nd - cucumbers cut into half rings, 3rd - egg yolks, followed by 4th layer, lay out the whites, on top place mushrooms fried with onions. Garnish the salad with finely chopped herbs.
Françoise salad
To make a spicy Françoise salad with tangerines, apples and mushrooms, you will need:
- 5 tangerines;
- 2 apples;
- 2 sweet peppers;
- 100 g of champignons;
- 200 g of hard cheese;
- 1 glass of low fat yogurt;
- 2 tbsp. l. lemon juice;
- 1 tsp. mustard;
- 1 tsp. honey;
- greens of dill and parsley.
Wash the apples, dry them, peel them, remove the cores, and cut the pulp into small cubes. Wipe the champignons with a damp cloth, cut into pieces and boil in salted water until tender. Wash the bell peppers and, after removing the seeds, cut into rings, and the hard cheese into cubes. Combine all ingredients with peeled tangerine wedges.
Make an original salad dressing. To do this: Thoroughly mix low-fat natural yogurt, freshly squeezed lemon juice, mustard and honey. Season the salad with the prepared sauce, stir, put in a salad bowl with a slide, garnish with sprigs of dill and parsley.
Mushrooms in the Snow Salad
To prepare the "Mushrooms in the Snow" salad, you need to take:
- 100 g of ham;
- 100 g of champignons;
- 6-7 pickled mushrooms;
- 170 g of canned corn;
- 170 g of canned green peas;
- 1-2 cloves of garlic;
- 100 g of cheese;
- 1-3 st. l. mayonnaise;
- 1 tsp. mustard;
- butter;
- pepper;
- salt.
Carefully wipe the champignons with a damp towel, cut into slices and fry in butter. Season with salt and pepper. Cut the ham into thin strips and lightly fry separately for 1-2 minutes. Then combine with mushrooms and cool. Transfer to a salad bowl, add canned corn and green peas, grated cheese and garlic cloves passed through a press. Then mix everything well and season with a mixture of mayonnaise and mustard. Serve the salad to the table, garnish with small pickled mushrooms.
