Berries are another plus of summer. Not only jams and compotes can be prepared from them. I suggest you make an unusual dessert - cold strawberry soup. It will appeal to both adults and children.
It is necessary
- - strawberries - 300 g;
- - juice of 1 lemon;
- - sugar - 150 g + 2 tablespoons;
- - potato starch - 2 teaspoons;
- - mint - 2 branches;
- - egg - 2 pcs;
- - salt - 1 pinch.

Step 1
This dish must be served with meringues, so it's worth starting with their preparation. Break the eggs and separate the whites from the yolks. Mix the first with salt and beat until lather. Then add 150 grams of sugar to the beaten egg whites, as well as 1 teaspoon of potato starch. Beat the mixture for 10 minutes.
Step 2
The resulting mixture must be transferred to a special pastry bag. Preheat oven to 110 degrees. While it is heating, place the small meringues on a baking sheet so that there is at least 3 centimeters between them. Bake them for 60 minutes. When they are ready, open the oven and let them cool right in it.
Step 3
With strawberries, do this: rinse thoroughly, cut into slices and transfer to a separate cup. For mint, separate the leaves from the twigs. The leaves must be crushed and then added to the chopped berry.
Step 4
Take a saucepan and pour 1 liter of water into it. When the water starts to boil, add the grated lemon zest and the juice of one lemon to it.
Step 5
Put starch and 2 tablespoons of sugar in a glass and pour 50 ml of water over them. Mix the resulting solution and pour into a saucepan with lemon zest and juice. Cook the mixture for 3 minutes.
Step 6
Remove the hot syrup from the stove and combine with chopped strawberries. Mix everything thoroughly and let the dish cool. After it has cooled down, put it in the refrigerator for 2 hours. Cold strawberry soup is ready!
