Agree that in the summer you want to eat quite a bit, and only that which is quite light. One such dish is cold soup with yogurt, tomatoes and basil. Thanks to such a snack, you will satisfy your hunger and cool down.
It is necessary
- - tomatoes - 450 g;
- - cucumber - 2 pcs.;
- - yogurt - 2 glasses;
- - chicken broth - 1 glass;
- - basil leaves - 5 glasses;
- - balsamic vinegar - 0.5 teaspoon;
- - ground black pepper - 1 teaspoon;
- - sugar - a pinch;
- - salt - a pinch.
Instructions
Step 1
After thoroughly rinsing with water, put the basil leaves in a saucepan in which you boiled water in advance, and blanch, that is, process them in boiling water for one minute. After the time has elapsed, remove the leaves from the dishes and place in a bowl of ice water. Then fold them in a colander, then let dry completely on a paper towel.
Step 2
With tomatoes and cucumbers, do the following: rinse, then chop into small enough pieces with a knife.
Step 3
Then place the tomato slices in a blender bowl along with salt and granulated sugar. Grind this mixture until you get a puree-like homogeneous mass.
Step 4
Pass the tomato puree through a sieve and combine with ingredients such as black pepper and balsamic vinegar. Mix everything as it should. Put the resulting mass into prepared ice molds and send it to the freezer. Stir this mixture every half hour until it hardens.
Step 5
Put the following ingredients in a blender: chopped cucumbers, blanched basil leaves, and chicken broth along with yogurt. Use natural yoghurt to make the cold soup. Grind everything until smooth. The resulting mixture, passing through a sieve, put in a prepared bowl and send to the refrigerator. She must stay there for at least 2 hours.
Step 6
After the time has elapsed, pour the chilled cucumber mass into cups, garnish with a few basil leaves and add tomato ice to it. Cold soup with yogurt, tomatoes and basil is ready!
