Making muffins or orange peel muffins is easy - this recipe is a lot like the classic orange muffin. Its peculiarity is that you can not throw away orange peels, but use them together with pulp and juice. It is necessary

  • - 1 medium orange
  • - 80 g butter
  • - half a glass of sugar
  • - 1 egg
  • - 1.5 g vanillin

Instructions

Step 1

Put the oven to heat up to 180 degrees. Pour some water into a saucepan to cover the bottom. Wash and peel the orange. Squeeze out the juice and set aside (we will add it later). Finely chop the crusts and place in a saucepan, simmer for 15-20 minutes until softened. Remove the crusts from the heat and leave to cool in a cool place. (The pulp can be left and then added to the dough, but this is not necessary - the taste and texture of the dessert will not change).

Put softened butter and sugar in a large bowl (the amount of sugar depends on your taste preferences, those with a sweet tooth can try adding a whole glass). Beat with a mixer or whisk until the butter begins to lighten. Add the egg and beat the mixture again until fluffy. Add vanillin (powder or essence) and stir.

We return to the orange. Drain the water in which the crusts were cooked. Transfer the crusts to a blender, pour orange juice there (and add pulp if desired). Grind the orange ingredients to a pulp.

Add orange gruel to a large bowl and mix well. Then gently (preferably with a whisk) stir in the flour. The amount of flour is approximately - you may need a little more than half a glass, the main thing is that the dough is thick and viscous. Loosen the dough - add baking powder from a bag or soda quenched with vinegar. Mix everything thoroughly again.

For muffins, pour the dough into paper molds (you don't need to grease them). Bake in an oven at 180 degrees for 40-50 minutes. For a cake - grease the pan with butter and sprinkle with flour, pour the dough into it. Bake in an oven at 180 degrees for 50-60 minutes.
