Vegetable stew is quick, simple, tasty and convenient. Convenience lies in the fact that this dish can be prepared not only from fresh but also frozen vegetables. As for the meat, here it is for your taste. Not only chicken, pork or beef is suitable, but also meatballs from any kind of minced meat.

It is necessary

  • Meatballs:
  • - 500 grams of minced meat (better than mixed),
  • - 1 medium onion,
  • - 1 egg,
  • - 2 tbsp. tablespoons of bread crumbs,
  • - 50 ml of warm water,
  • - 1, 5 teaspoons of fine sea salt,
  • - ground black pepper to taste,
  • - 2 tbsp. tablespoons of flour.
  • For the vegetable stew:
  • - 1 medium onion,
  • - 0.5 liters of hot water,
  • - fine sea salt to taste,
  • - ground black pepper to taste,
  • - 2-3 medium tomatoes,
  • - 1 medium carrot,
  • - 1 bell pepper (you can take half each red and yellow),
  • - 2 cloves of garlic,
  • - 2 tbsp. tablespoons of butter
  • - 1 tbsp. a spoonful of sunflower oil,
  • - parsley to taste,
  • - 1 teaspoon of rosemary,
  • - 1 teaspoon of basil,
  • - saffron to taste,
  • - green peas to taste.

Instructions

Step 1

Peel the onion, chop it coarsely and punch through a blender. Put 500 grams of minced meat in a blender bowl, season with salt, pepper (if desired, add red sweet pepper) and punch again. Add 50 ml of warm water to the meat mass, mix. Then add the breadcrumbs.

Step 2

Beat the egg a little, pour into the minced meat, stir until smooth. Form balls from the resulting minced meat, roll in flour.

Step 3

Heat the sunflower oil in a skillet (amount of oil if desired) and fry the meatballs until crisp. It is best to fry in 2-3 passes (depending on the number of meatballs and the size of the pan). Transfer the ruddy meatballs to a plate covered with napkins.

Step 4

For the stew.

Peel the onion, cut into cubes.

Grate the peeled carrots on a coarse grater.

Rinse the bell peppers, peel them, cut into strips or cubes.

Step 5

Heat butter and sunflower oil in a saucepan. Fry the onion cubes until soft. Put grated carrots in a saucepan, fry for two minutes. Then add the bell peppers and cook for 5 minutes.

Step 6

Grate tomatoes on a coarse grater or cut into small pieces. Transfer the tomatoes to a saucepan with vegetables, add half a liter of hot water, salt and pepper, season with rosemary, basil and chopped garlic, stir. After boiling, taste with salt. Close the lid, simmer for half an hour over low heat.

Step 7

Add the meatballs to the stew and simmer, covered, for ten minutes. Then add the green peas, season with saffron, cook for another ten minutes. Add chopped parsley before serving.
