The aromatic vegetable and bean stew is a lean dish that will diversify any family dinner. For those who do not fast, meatballs with suluguni cheese will be a tasty addition to the stew.

It is necessary

  • Base ingredients:
  • • 50 g of beans;
  • • 0.5 kg. white cabbage;
  • • 2 potatoes;
  • • 1 carrot;
  • • 2 onions;
  • • 1 tsp. vinegar;
  • • 3 allspice;
  • • 2 bay leaves;
  • • ½ tbsp. l. Sahara;
  • • 3 tbsp. l. tomato paste;
  • • salt and black pepper.
  • Ingredients for the supplement:
  • • 0.3 kg. minced turkey or chicken;
  • • 1 clove of garlic;
  • • 6 slices of suluguni;
  • • sunflower oil;
  • • bread crumbs;
  • • greens of dill at will;
  • • salt and pepper.

Instructions

Step 1

Rinse the beans thoroughly, add water and leave to stand for 3-4 hours. After this time, drain the water, pour the swollen beans with new water (adhering to a ratio of 1: 5) and cook for 1 hour.

Step 2

Season the minced meat with salt, pepper and chopped garlic. Knead and beat with your hands.

Step 3

Divide the minced meat into 6 equal parts. Place 1 slice of suluguni in each part, forming meatballs. Note that the meatballs are best formed with wet hands, then the minced meat will not stick to the skin of the hands.

Step 4

Roll the formed meatballs in breadcrumbs and fry in oil until tender.

Step 5

Pour oil into a deep frying pan and heat it up.

Cut the potatoes into large cubes, put in hot oil and fry over low heat, stirring occasionally.

Cut the carrots and onions into medium cubes, add to the potatoes and continue to fry, stirring occasionally.

Cut the cabbage into squares and add it to the vegetables.

Season vegetables in a skillet with salt and pepper, mix well and cook over low heat with the lid closed until the cabbage is soft.

Step 10

When the cabbage becomes soft, then add tomato paste, water, vinegar, bay leaves, sugar and allspice to the stew. Mix everything thoroughly, cover and continue cooking.

Step 11

At the end of cooking add boiled beans to the pan. Cook everything together for another 5 minutes, then turn off and leave to stand for 3-4 minutes with the lid closed.

Step 12

While the stew is infusing, the meatballs can be heated slightly to melt the cheese inside again.

Step 13

Sprinkle the vegetable stew on plates, sprinkle with chopped herbs and serve along with aromatic meatballs.
