It is necessary

  • Two eggplants,
  • 150 grams of champignons,
  • two onions
  • 100 ml olive oil
  • 50 grams of fresh parsley
  • three sprigs of thyme,
  • 50 grams of fresh dill,
  • some salt
  • a little black pepper,
  • 150 grams of oyster mushrooms,
  • a clove of garlic (you can have two cloves - to taste),
  • two carrots,
  • two cuttings of celery,
  • jar of canned tomatoes.

Instructions

Step 1

We wash two eggplants and cut into thick and large circles. We make small pockets inside the circles with a knife, we will put the minced meat in them.

Step 2

Cooking minced meat. Finely chop the mushrooms. Peel and chop two onions. In a bowl, mix the mushrooms and onions, salt and pepper a little.

Step 3

Heat half of the olive oil in a frying pan, fry finely chopped champignons and chopped onions. Add two sprigs of thyme.

Step 4

Put a tablespoon of minced mushroom in the eggplant pockets.

Step 5

Cooking the sauce. Coarsely chop the oyster mushrooms, cut the celery into cubes, wash and peel two small carrots, cut into slices.

Step 6

Fry thyme and finely chopped garlic clove in hot olive oil. Add the chopped vegetables and continue to fry for 5 seconds. Then add the oyster mushrooms.

Step 7

Peel the tomatoes and cut them into small cubes (as it turns out, the smaller the better). Add the tomatoes to the pan to the oyster mushrooms. Simmer for three minutes.

Step 8

For baking, we need a deep refractory plate. We shift eggplants with minced meat into it, pour mushroom sauce. We bake in the oven for 10 minutes at 180 degrees.

Sprinkle the finished eggplants with chopped parsley and dill. Serve on the table. Bon Appetit.
