Even if you don't really like eggplant, try this recipe. Stuffed eggplants are sure to amaze you with their taste. The dish turns out to be juicy and tasty.

It is necessary
- - 2 large eggplants;
- - 200 g minced meat;
- - 2 onions;
- - 200 g of any mushrooms;
- - salt, pepper to taste;
- - cheese to taste.
Instructions
Step 1
Wash the eggplants and pat dry with a paper towel. Cut each eggplant lengthwise into two equal pieces. Gently, using a teaspoon, remove the inside of the eggplant. Salt lightly and leave to absorb the salt.

Meanwhile, fry the finely chopped onion until transparent. Cut the washed mushrooms into thin plastics. Add the chopped mushrooms and eggplant pulp you removed earlier to the skillet.
Step 3
Fry the mixture a little over medium heat. Stir constantly during frying. Add minced meat to the mixture, salt and pepper the entire contents of the pan. Stir the whole mixture again.
Step 4
By that time, the eggplants will have time to take in a little salt, and rinse off the grains remaining on the surface under running water.

Place the prepared filling in the middle of each eggplant half. Place the stuffed eggplants in the oven and leave to bake for 30 minutes at 200-220 degrees. Sprinkle the grated cheese over the eggplants and put them back in the oven to melt the cheese.
