The rich taste and aroma of the meat hodgepodge will not leave your loved ones and friends unimpressed. It is especially good to cook it on New Year's holidays and in winter. Try making a hearty and deliciously delicious potted hodgepodge in the oven! You will be surprised that the hodgepodge will turn out to be many times tastier and more aromatic than if you cook it on the stove.
It is necessary
- 500 grams of beef for broth,
- 2 liters of water
- salt to taste
- 1 bay leaf
- 10 peppercorns
- 160 grams of onions
- 300 grams of sausages and sausages (sausages, smoked sausage, as long as there is bacon),
- 2 tbsp. tablespoons of vegetable oil
- 100 grams of carrots,
- 250 grams of pickled cucumbers,
- 2 cloves of garlic
- 2 tbsp. tablespoons of tomato paste,
- 100 grams of boiled beans,
- 200 grams of brine,
- 2 tbsp. tablespoons of vegetable oil
- half a lemon
- 100 grams of olives,
- some greenery,
- 100 grams of sour cream.
Instructions
Step 1
Soak the beef for 20 minutes, then rinse and fill with cold water. We put a saucepan with meat on medium heat and after boiling, cook for 2, 5 hours. Salt 10 until tender, add peppercorns and lavrushka.
Step 2
Soak the portioned pots in warm water for half an hour in advance.
Step 3
We take out the meat from the finished beef broth, cut it into pieces, put it in pots.
Step 4
Cut the peeled onion into thin half rings. The bacon is best cut into strips, but to taste.
Step 5
Heat a tablespoon of vegetable oil in a frying pan, fry the bacon for two minutes, then add half rings of onion to it and continue to fry for another five minutes. Add any sausages (sausages or small sausages) to the pan and fry for two minutes. Remove the pan from the heat and place the contents in the pots.
Step 6
We wash and clean the carrots, cut into strips. Cut the cucumbers into thin slices. Peel the garlic cloves and chop finely. Cut the smoked meats into strips.
Step 7
We put a frying pan with a second spoonful of vegetable oil over medium heat and fry the carrots with cucumbers, add smoked meats in a minute. Put the tomato paste with chopped garlic, stir and fry for another three minutes.
Step 8
Put the boiled beans in pots, put the contents of the pan on top.
Step 9
Pour the brine into a saucepan, after boiling, remove the foam. Add strained meat broth, stir and remove from heat after boiling. Pour the contents of the pots with the resulting broth.
Step 10
We heat the oven to 150 degrees. We put the pots (covered with lids) in the oven and after five minutes we add the temperature to 210 degrees. After the broth in the pots has boiled (after 15-20 minutes), we reduce the temperature to 160 degrees. Cooking the hodgepodge for half an hour.
Step 11
After half an hour, we take out the pots of hodgepodge, add lemon juice, cover with lids and simmer in the oven for another 20 minutes. Decorate with olives and fresh herbs. Serve with sour cream.
