A hodgepodge prepared according to a classic recipe should contain at least three types of meat. For example, beef ribs, ham and cooked sausage. By the way, for a change, you can cook fish hodgepodge using different varieties, including red fish, fresh, salted and dried.

For this first course, you will need several types of meat products: 300 g of beef pulp and any smoked meats each, 3 sausages and 150 g of carbonate. You also need 3 pickles, 50 g of capers, 5 olives, 1 onion, 3 olives, 4 tsp. tomato paste, a little vegetable oil, 3 bay leaves, 1 carrot, lemon and sour cream.

First, a rich broth is prepared: the meat is washed, put in a saucepan with cold water, brought to a boil, the foam is removed, then the heat is reduced and cooked for another 1.5 hours. And when the broth is ready, the meat is taken out, cut into small pieces and poured back into the pan. The rest of the meat products are first fried in a pan with oil so that a golden crust appears, and then added to the broth.

When the meat is ready, they start cooking vegetables: the onions are cut into cubes, the carrots are rubbed, and then they are fried in a pan until golden brown and poured into a saucepan. Cut the cucumbers into small strips, lightly fry and put in a hodgepodge. Together with vegetables add tomato paste, spices, olives and capers and cook for another 5 minutes.

Lemon and sour cream are placed in a dish before serving. You can also add cabbage, potatoes, cucumber pickle and garlic to the meat hodgepodge.
