The recipe for the hodgepodge of the national team was popular in Russia back in the 10th century. Fish, meat, mushroom - types of hodgepodge, which was prepared by our Slavic ancestors. Modern housewives prefer the recipe for meat hodgepodge over others, since the dish turns out to be hearty, rich and has an original taste.
It is necessary
- -1, 7 liters of chicken or pork broth;
- –Hunting sausages (3 pcs.);
- –30 g each of various smoked meats (brisket, sausages, carbonate, ribs, bacon);
- –Salted cucumbers (1-2 pcs.);
- –Potatoes (1-2 pcs.);
- -lemon;
- -salt pepper;
- –Carrot (1 pc.);
- –Red onion (half);
- - laurel leaf;
- - pitted olives (5-9 pcs.);
- -olive oil;
- - thick tomato paste (1-2, 5 tablespoons).
Instructions
Step 1
Take a deep saucepan and pre-cook the broth. Salt a little. Do not forget to add pickles later. Therefore, be careful with the salt. Remove the meat with a slotted spoon and leave to cool. Rinse the potatoes, remove the skin and cut into cubes or strips, then place in the hot broth.
Step 2
Chop the carrots and onions separately and fry in olive oil. Place in a saucepan. Skim off the froth that forms from cooking vegetables.
Step 3
Cut the assorted smoked meats into small pieces and add to the soup. Wait for the broth to boil. Grate pickles and sauté with tomato paste. Put the resulting mixture in the broth and stir.
Step 4
The last stage of cooking is adding olives, cut in circles or halves. As a result, put the chopped meat on which the broth was cooked, bay leaves in the soup and do not forget to pepper.
