Catfish contains such macro and microelements as calcium, magnesium, sodium, potassium, phosphorus, chlorine, sulfur, iron, zinc, iodine, copper, manganese, chromium, fluorine, molybdenum, cobalt, nickel. It also contains a large amount of fats and proteins, which are sources of energy for the human body.
For cooking you will need:
- Fresh chilled catfish for 3 kg weight,
- ground black pepper,
- 3 medium lemons
- 5 sprigs of dill,
- 5 sprigs of parsley,
- 3 sprigs of cilantro,
- ground red pepper,
- coriander,
- sesame,
- ground nutmeg,
- salt,
- barbecue with coals,
- barbecue grill.
Cooking method:
- Take the fish, scrape off the mucus from it with a sharp knife, wash it well, put it on a large cutting board and wipe it off with paper towels.
- Then, with a sharp knife, rip open the belly and remove all the insides.
- Remove the gills and rub the fish thoroughly again with paper towels inside and out.
- Cut off the head and tail.
- Carefully cut the fish along the ridge and separate the ridge from the meat.
- Cut the resulting fillet into 6 cm wide pieces.
- In the grill, cook the coals for frying.
- Mix the salt, seasonings, spices together, sprinkle each piece completely and place on the wire rack.
- Fry on hot coals in the grill, constantly turning, until golden brown.
- Put the finished fish in a beautiful large plate, squeeze lemon juice onto it.
- Serve with boiled rice, ripe red tomatoes, not large cucumbers and bell peppers.
