Various game is traditionally considered an attribute of the festive table. But even on it, it does not appear often - such meat is more expensive than ordinary beef or pork. The more pleasantly the guests will be surprised when they see exquisite hare meatballs on your table.

- 100 g lard;

Instructions
Step 1
Rinse the hare fillet, peel off films and veins, cut into large pieces and scroll through a meat grinder. In the process, add to the meat stale bread without a crust, soaked in milk and then squeezed out, as well as lard. Knead the resulting minced meat well with your hands, turning it into a homogeneous mass. Season the meat with salt and pepper. Add chopped garlic or dried Provencal herbs if desired.
Step 2
Make small balls out of the scrolled meat - first roll the minced meat into balls that take about half of your palm, and then flatten them slightly. Dip the meatballs in flour or breadcrumbs. Preheat a skillet with vegetable oil. Place finely chopped onion in it and cook for 3-4 minutes until golden brown. Then fry the meatballs in the same pan - they should be cooked along with the onions. Fry them on both sides and sides for 3 minutes. Pour sour cream into a frying pan, cover and simmer for 15 minutes over medium heat. Season with salt and pepper to taste.
Step 3
Serve the hare meatballs hot with the resulting sour cream sauce. As a side dish, fried potato slices, crumbly buckwheat porridge with butter, as well as a salad of tomatoes, cucumbers and herbs are suitable for the dish. The Spanish red wine Rioja can be a good drink to accompany the game. Its bright taste will complement the interesting nuances of this dish.

If you don't like minced meat, make minced meat. To do this, finely chop all the ingredients with a sharp knife or chop the meat and lard in a blender. Also, if desired, you can add a raw egg to them - such minced meat will better preserve the juiciness of the meat.

Tomato lovers can change the sauce for the meatballs. To make a delicious pink gravy, scald the tomatoes, peel them, remove the seeds, and cut the flesh into cubes. Place the tomato slices in the skillet at the same time as the sour cream. Since the tomatoes will provide extra juice, you can thicken the gravy by adding a tablespoon of flour to the gravy. You can also add a few finely chopped cloves of garlic to such a sauce - this will add extra spice to the dish.
