Step 1

Take oatmeal. Pour them into a dry skillet and dry well over low heat for 10 minutes. Stir until a characteristic odor appears. The flakes should not change color. Cool, transfer to a plastic bag and roll out with a rolling pin until you get flour.

Take any nuts, fry them in a pan, refrigerate. Grind in a mortar, or put in a bag and roll with a rolling pin until fine crumbs are obtained.

Take eggs. Separate the yolk from the protein using a special tool. Put the protein in the refrigerator. Add sugar and vanillin to a container with yolk. Rub until smooth.

Beat the egg white with a mixer until foamy, gently pour into the dough and mix. Quench the baking soda with vinegar and mix with flour. Add to dough and mix again.

Put the prepared mass in the refrigerator for 30 minutes, covered with a film so that the flakes swell. Use your hands to form the dough into cakes. To do this, roll a ball and flatten it between your palms. Place the cookies on a baking sheet that has been covered with parchment paper. The distance between them is 3 cm, the thickness is not more than 1 cm. The thinner and smaller the cookies are, the more crumbly they will turn out. If the cookie is not very thin, it will be crispy after baking.

Step 7

In the middle of each cookie, place a quarter of a walnut, a strip of dried apricots, or a raisin to garnish. Place the baking sheet in the oven. Bake the cookies for 20 minutes. It doubles in volume. Carefully remove the cookies from the baking sheet with a spatula. Refrigerate and serve.
