True connoisseurs of coffee prefer to prepare it in a Turk or at least in a coffee machine. But, if there is no opportunity to brew "real coffee", it is not necessary to use an instant substitute. Natural ground coffee brewed in a cup is, of course, inferior to a drink prepared according to all the rules, but it is much superior to even good instant coffee both in taste and in aroma. The main thing is to brew coffee in a cup correctly.

Step 1
Coffee in a cup is prepared quite quickly, so finely ground coffee is used for its preparation - the rate of its extraction is much higher, which means that the drink will be stronger and more aromatic. Some manufacturers mark their finely ground coffee packages as “For Brewing in a Cup”.
Step 2
It is better to choose a thick-walled cup for brewing coffee, ideally a ceramic one. It must hold heat well, otherwise the water will cool down before the coffee is brewed. Before cooking, warm up the cup by pouring boiling water into it for one to two minutes, or just hold it under running hot water from the tap.
Step 3
Pour one to two teaspoons of ground coffee into a cup. If you drink coffee with sugar, add sugar immediately, it will help the coffee grounds to settle at the bottom. If desired, you can add spices: a pinch of ground cinnamon or ginger, cardamom, nutmeg. A few grains of salt are also appropriate to soften the taste of the coffee.
Step 4
Pour boiling water over the coffee. The optimum water temperature for making coffee is 96-98 ° C, but while the stream is pouring from the teapot into the cup, the liquid has time to cool down a little. Therefore, water that boiled a few minutes ago is no longer suitable for making coffee: the final temperature will be too low.
Step 5
Stir the coffee quickly and cover the cup with a lid (you can use a saucer). Let sit for two to three minutes, then remove the lid. There is no need to stir the drink and disturb the coffee grounds that have settled to the bottom - small particles of coffee falling on the tongue can ruin all the pleasure.
Step 6
Coffee brewed in a cup is sometimes called "Polish coffee". This recipe also has one more, ironic name - "Wachter's coffee".
