Lagman soup is a recipe that was apparently invented by the Uighurs and then spread throughout Central Asia. This dish is often called lagman soup, the recipe is actually the same, just add more broth. There is no single rule on how to properly prepare lagman. Lamb lagman is usually prepared, pork lagman is less common. In a nutshell, how to cook lagman: first, prepare the gravy with meat and vegetables, boil the noodles, then combine them together already in the plate and sprinkle our lagman with herbs. In principle, it is not necessary to know how to cook noodles for lagman, you can buy it.

- Required Ingredients:
- Meat (pork, lamb or beef to your taste) - 500 grams
- Potatoes - 3 - 4 pieces (200 grams)
- Medium onions - 2 pieces
- Sweet Bulgarian pepper - 1 piece
- Medium carrots - 1 piece
- Fresh herbs (dill, parsley, cilantro) - 1 bunch
- Tomatoes - 1 piece
- Garlic - 1 head
- Hot pepper - 1 piece
- Spaghetti "Makfa" - 1 package (400 grams)
- Ground black pepper - 2 teaspoons
- Salt
- Spices to taste
- Paprika - 2 teaspoons
- Zira - 2 teaspoons
- Sunflower oil for frying vegetables and meat,
- Before serving: soy sauce - 1 teaspoon and vinegar - to taste
Instructions
Step 1
Cut vegetables and meat into small cubes, add greens, garlic, hot peppers at the end.
Step 2
We put a saucepan with a thick-walled bottom at the highest temperature, pour in vegetable oil and wait for the oil to heat up. As the oil warms up, put the meat and fry it. After the meat, add the onion, cut into half rings, mix well with a spatula.
Step 3
Put water in another saucepan in order to boil the spaghetti.
Step 4
Add diced carrots to the onion with meat. Mix everything and fry for about 3 - 4 minutes.
Step 5
After the carrots, put the bell peppers and tomatoes, also diced. Mix everything with a spatula.
Step 6
Add potatoes. Stir and fry for about 3 - 4 minutes.
Step 7
Add boiled water. The water level should be more than 2 fingers high.
Step 8
Add paprika - 2 teaspoons, ground black pepper to taste, cumin - 1 teaspoon.
Step 9
Meanwhile, the water in a nearby saucepan has boiled, put the spaghetti to boil. Cook "Makfa" quickly, literally about 7 minutes. We discard the spaghetti in a colander.
Step 10
Add salt to taste and finely chopped garlic to the broth, where vegetables are already boiling. We also rinse hot peppers in running water and put them whole in the broth. Cook for another 10 minutes.
Step 11
Prepare fresh herbs and chop it finely.
Step 12
The broth is ready. You can turn off the stove.
Step 13
Before serving, put the spaghetti in a plate and top with vegetables with a little broth. Sprinkle with plenty of fresh herbs on top. Add 1 tablespoon soy sauce and vinegar to spice up our dish. Bon Appetit!
