Step 1
Defrost the squid in warm - about 30 degrees - water. It is advisable not to overexpose squid in water, so that they do not lose their nutritional properties, including the long-term presence of squid in water can lead to a loss of iodine reserves, which is so urgently needed in our conditions.
Step 2
Remove the squid from the water and carefully separate the head and entrails so as not to compromise the integrity of the sepia pouch, the contents of which can turn the fillets black.
Step 3
Fillet the squid or cut into rings as you like.
Step 4
Prepare a brine with salt and water at a temperature of about 20 degrees. Filter it. Place the squid in the brine. The time for salting fillets is 2-5 minutes, rings - 1-2 minutes.
Step 5
Remove the squid from the brine, place on the wire rack to drain the excess water. Leave it for twenty minutes.
Step 6
After all this, place the squid on the grill rack. You can dry in a microwave oven with a combined mode or on an airfryer. It is better to select the mode individually. The approximate drying temperature is 60-80 degrees Celsius.
Step 7
Dried squid fillets can be ripped into strips to create dried squid strips.
