Eggplant with mozzarella is an excellent appetizer for a festive table, which is prepared in just half an hour.
It is necessary
- For four servings:
- - eggplant - 400 g;
- - tomato paste - 300 g;
- - mozzarella cheese - 200 g;
- - basil leaves - 1/4 cup;
- - Parmesan cheese - to taste;
- - olive oil, salt - to taste.
Instructions
Step 1
Cut the eggplants into pieces, fry them in olive oil. Then dry on paper towels.
Step 2
Cut the mozzarella into thin slices.
Step 3
Take four portioned baking dishes, and each with two eggplant slices and a circle of cheese, add chopped basil and tomato paste.
Step 4
Repeat layers five times, bake for 10 minutes at 170 degrees.
Step 5
Serve the finished snack like this: pour warm tomato sauce on the plates, place an eggplant pyramid in the center. Garnish with slices of fried eggplant and a basil leaf. You can sprinkle with grated cheese.
