Vegetable stew with mozzarella is an excellent appetizer for any festive table. Such a dish requires little preparation time and minimum costs.
It is necessary
- - medium eggplants 2 pcs.;
- - zucchini 1 pc.;
- - mushrooms 700 g;
- - onion 1 pc.;
- - bell pepper 1 pc.;
- - tomatoes 3 pcs.;
- - 3 tooth garlic;
- - mozzarella (small balls) 100 g;
- - olive oil;
- - greens;
- - pepper, salt.
Instructions
Step 1
Cut the mushrooms into small cubes, cover with water and bring to a boil. Remove the foam and cook over low heat for 15-20 minutes. Throw the finished mushrooms in a colander.
Step 2
Peel the bell pepper. Chop the onion. Cut the eggplants, zucchini and peppers into small cubes. Grate the tomatoes on a coarse grater.
Step 3
Heat oil in a skillet and save the onion. Add pepper and simmer for 5 minutes. Add the eggplants and zucchini, add the tomatoes after 10 minutes, cover and simmer for 15 minutes.
Step 4
Add mushrooms to vegetables and cook for 10 minutes, season with salt and pepper. Sprinkle with herbs and chopped garlic, remove from heat after a couple of minutes. Add mozzarella and leave covered for 15 minutes.
