Instructions

Step 1

Choose large, firm yellow bananas for caramelization. Slightly green fruits are unripe and can add a bitter taste to a dish. Soft bananas will not hold their shape while cooking.

Step 2

Peel the bananas. If you will be serving bananas on their own or as Foster's bananas, cut them in half lengthwise. If you are going to use caramelized bananas as a filling, cut them into 1-1.5 centimeter slices.

Step 3

Caramelized bananas

Place a heavy, wide skillet over medium heat and melt the butter in it. As soon as the butter begins to bubble, add brown sugar in a thin stream, stirring gently. When you have a smooth, smooth caramel, add the bananas. If you have banana halves, place them flat side up. Simmer the bananas for 20 seconds, then sprinkle with half the cinnamon and cook for another 10 seconds.

Step 4

Flip the bananas flat side down, coat with icing and sprinkle with remaining cinnamon. At this point, you can add alcohol or plain orange juice. Be careful if you choose to add liquor, rum or cognac - they can burst into flames.

Step 5

Pour the caramel sauce over the bananas every 20 seconds. Cook for about 1 minute more. Before serving, you can dip the bananas in chopped nuts, almond crumbs, muesli.

Foster's bananas

In a flambé skillet over medium heat, combine the butter, brown sugar and cinnamon. Stir until sugar dissolves. Add the banana liqueur and place the sliced bananas, cut side up.

Step 7

When the bananas turn brown, gently pour in the rum or cognac. Wait until it flares up, if the alcohol doesn't catch fire - set it on fire yourself. Wait for the flame to go out, add lemon juice to the caramel and pour bananas on it.

Garnish a scoop of ice cream with the caramelized bananas and drizzle with the remaining warm sauce.
